Quinoa Kale Salad

Quinoa & Kale Salad

This is one of my favourites. It's easy to make, you can mix it up with different ingredients to make the lunch interesting every day and of course healthy and full of nutrition to get you going all day.

Step one

Cook the quinoa and wash in cold water.

Step two

Wash the Kale and chop it in small pieces.

Step three

Squeeze a bit of lemon juice on the Kale. 1/2 a lemon is usually good. If you have lime that will work as well or why not use both. You can also add a little bit of apple cider vinegar.

Then add salt and Olive oil. You don't want the kale dry. Add more lemon juice and Olive oil if that happen. You can also use lemon and lime zest for more flavour.

Step four

Add the quinoa.

Step five

My favourite part. You now have got the base of the salad and it is time to make it a bit more interesting. You can add exactly anything you like in it. Tomatoes, seeds, nuts, fruit, zucchini, cheese, onion. Yeah you can't go wrong.

Here are some tips what we use to have in our salad,

  • Simply just add a lot of coconut flakes, ( 1 cup or more ) That is one of my favourite.

  • Fruits, lots of fruits. Pear is one favourite, peach, apples, any kind of melon.

  • I usually always use seeds and spring onion in the salad as well. Sunflower seeds or pepitas is one favourite.

Let loose and be creative :-)))

This salad will last for about 5 days in the fridge and still be fresh. The Lemon and apple cider vinegar does the trick. It also take the bitter taste from the kale away.

Remember that you can add different fruits or nuts, seeds in the sallad everyday or change it around every week. It is also really nice to eat together with Hummus,
