New recipe!


Hi Guys!

Thought I will share my recipe on a Peanut butter, Banana bread I made today, and of course it is healthy!

  • 3 Eggs

  • 1/2 cup Brown flaxseed meal

  • 1cup LSA meal

  • 1,5 cup Coconut milk

  • 1 banana

  • 1 tsp baking powder

  • 1/2 cup chopped almonds

  • 2 tbsp Chia seeds

  • 2 tbsp melted coconut oil

  • 1 tsp cinnamon

  • 3/4 cup peanut butter

2 chopped bananas for topping.

I mix all the ingredients together and after that pure half of it in a baking tray add one chopped banana and then add the rest of the mixture and then another chopper banana on the top,

After that bake it in the oven for about approx. 40 mins on 175 degrees.

It feels so good to be back into healthy eating and training again. It is so many local fruit and veggie markets around here.

Every Friday to Sunday they have a big one in the city, so we usually stuck up on veggies and fruits on the weekends now. Nice to get local fresh fruit.

The photo above is a brekkie bowl I have made of frozen raspberries, frozen mango, orange and topped it with banana, seeds, nuts, bee pollen etc..

Both me and Jakob had the day off today. I'm working weekends now, and will have two days of during the week instead, it's fine for me. I actually prefer to have my days off during the week.

I'm also working till 21:00 on Thursday, because the shopping centre is open late.

When we cycled from Sydney up here we stayed with a lovely couple in Mclean for 2 nights and they are up here in Cairns for couple of days so we meet them for a "fika" as we say in Swedish

(basically coffee/tea and a little sweet) We went to the Swedish café here in Cairns so I had a little cheat day and shared cinnamon bun and mud cake with Jakob. Soooo nice! It would be so hard to stay of the sugar if I lived in Sweden.

I also bought some new training clothes today at Lorna Jane,

Loove when it is sales on. I pretty much live in my active wear they are so comfortable to walk around in and because I'm training every day pretty much now I really needed som new clothes. I couldn't take a lot with me on the bike from Sydney.

 

I started my morning today with a trail run, it's nothing more fun than head out and just run in the rain forest. (expect all the snakes I fear to run into) My legs is struggling really bad to run uphill but I hope after a couple of runs that they will get back into it again. I'm thinking to do a race up here second weekend in August. it's a Mountain race, called the Pyramid race, you are running up the mountain and back down, I think it's only 12 km race. but that would be a perfect distant to start with. Let's see how the training going next week and I will decided after that if I will enter to the race.

We have signed up to a gym and did 2 sessions this week. I can feel that I haven't worked out in a while. I hate the feeling when you struggling with exercises that was really easy before. We did a yoga session as well. it was alright. I actually prefer the YIN yoga, you are holding the poses a lot longer and get a deeper stretch out of it.

The best part of the gym is the Sauna. I love going to the sauna and have a good sweat after a gym sesh. Maybe it's my Finnish blood that's drags me to the saunas.

It's a pretty hilly single trail and lots of rocks, rots and other stuff in your way so you have to watch the entire time where you put your feet. I had a pretty big bird today that started to follow me, I stopped to take photos and he walked up to me and then I started to walk away and he run after me so I started to run and then I stopped again to take photo and he was coming after me again, He wasn't nasty but more courious.

 

Happy Friday guys!! Finish the blog with these two photos from the healthy and delicious dinner me and Jakob cooked for tonight. Sweet potato, pumpkins, broccoli, beef and a little sallad.
